I think that rotisserie chicken is severely under appreciated! Chicken is a huge staple to my diet... High in protein and low in fat! Plus chicken is pretty much all those bikini competitors eat (literally they cook a bunch of chicken on Sunday, put it in some tubaware with vegetables, and ta-da! Lunch and dinner for the rest of the week!). Honestly, it's not a bad idea! I've done it before and may start again!
Anyway, have you ever been on a road trip and thought that the only thing to eat was greasy fast food? Have you ever ran out if time to cook dinner and thought that your only option was to go pick up a pizza? Think again!
Next time, take your plastic utensils over to the nearest grocery store and get a five dollar rotisserie chicken! Pair it with a bag of veggies or pre packaged salad--and voila! Fast food crisis is avoided!
Today I wasn't necessarily in a time crunch so I took some time to make my "Healthy French Fries" with my rotisserie chicken. Ok, they're not French Fries, they're actually string green beans. But I may like them even more than French fries! (What's wrong with me?!?)
But really, just wait until you try them!
String Green Bean "French Fries"
Serves 2
2 tbs olive oil
Salt
Pepper
Garlic Powder
1. Heat oven to 400.
2. Lay green beans straight across two baking sheets.
3. Drizzle olive oil over green beans.
4. Season with salt, fresh cracked pepper and garlic powder to taste. (I'd say I probably coat with 1/4 tsp pepper, 1/2 tsp salt and 1/2 tsp garlic powder... But do it to what tastes right to you!)
5. Toss to coat.
5. Bake at 400 for 20 minutes... Flipping at 10 minutes.
6. Enjoy! I like mine to brown up a little, even better!
*hint* I've found that every two handfuls of fresh green beans serves one person.
Not sure what it is, but I totally crave these! Maybe it's the salt, but they definitely kick any French Fry craving you may have in the butt!

ReplyDeleteThese look amazing! I noticed you use olive oil quite a bit in your cooking but I was wondering if you ever use coconut oil? I just bought a huge tub at Costco.
ReplyDeleteObsessed the coconut oil! Have you tried cooking it with your eggs? Ooooh delicious. I haven't incorporate coconut oil into this recipe because I was wondering if it would make it taste funny. Let me know if you try it!
DeleteI cook pretty much everything with coconut oil haha. It does give veggies a bit of a different flavor but its not bad. But it is especially good with brownies... However that is not really helping me to lose the baby weight... :P
