You heard me right, egg white and quinoa "fried rice". This recipe is so healthy I'm fairly sure you would be nutritionally satisfied if this was all you ate for the rest of your life ;). No but really... This is the elite of health food recipes! The best part? Not one ounce of guilt as you go for seconds (or thirds for that matter)!
Ingredients
2 cups quinoa
4 cups water
1 cup chopped yellow onion
4 chopped carrots
1 1/2 tsp minced garlic
Olive oil
8 egg whites
1 cup frozen peas
1/4 cup teriyaki sauce
1/2 cup low sodium soy sauce
2 tsp sesame oil
Instructions
1. Rinse quinoa. Put water and quinoa in large pan. Cook quinoa according to package instructions.
2. Chop onion and carrots. In separate pan warm a tablespoon of olive oil over medium heat. Add chopped onion, carrots, peas, and minced garlic and cover. Continue to cook over medium heat until onions are translucent and carrots are tender. Stir frequently.
3. Crack eggs, dispose of yolks and scramble egg whites. I scramble mine in a pan... But you could do it in the microwave as well.
3. In a separate bowl combine teriyaki sauce, soy sauce, and sesame oil.
4. Once the quinoa is cooked, eggs are scrambled and vegetables are tender, add the vegetables, eggs, and sauce to quinoa. Stir.
5. Turn on a chick flick, break out the chopsticks, and enjoy your Chinese "take out". Now where's that fortune cookie…
