Mini Egg White Omlettes

The live fit program by Jamie Eason requires that you eat A LOT of egg whites. Egg whites are pretty much the super food in my opinion... packing FOUR grams of protein and only 17 calories in each egg white. Say what???

Yeah I know, they're amazing. The problem is I can only choke down so many hard boiled eggs before I find eating eggs a task and get a little gaggy while eating them. I had seen the idea of "egg white bites" floating around pintrest so I decided to give it a go. Result? Success!

Ingredients
24 eggs
Onion
Red pepper
Yellow pepper
Cooking spray
Pepper
*any additional ingredients you would like to add!*

1. Heat oven to 350 F degrees. Spray muffin tin with olive oil so it coats the bottom.
2.  Dice onion and peppers.
3. Crack all eggs into one bowl to make sure no shells get in. Dispose of yolks.
4. Divide diced vegetables among muffin tin.
5. Add egg whites to muffin tin, filling nearly to top. Grind fresh pepper over top.
6. Cook in oven for about 25 minutes (more or less to your liking).
7. Let cool and then enjoy with some hot sauce, salsa, or ketchup (or on their own!).
8. They can stay good in the fridge up to 4 days, I just placed a paper towel on a plate under the mini omlettes to soak up some of the moisture the vegetables released.

Each mini egg omlette has 44 calories and 8 grams of protien. That protein will keep you full and your blood sugar stable all morning long!
