I originally found this recipe on Pintrest (at Gimme Some Oven) and then I added a few tweaks to it myself (more Kale, bit less ginger, low sodium soy sauce, and added a tiny bit of sugar… everything in moderation!)
Ingredients (serves 4 hungry adults)
10 cups of Kale (fresh, chopped. I only needed one bunch of kale to get this much!)
4 Green Onions (thinly sliced)
2 pounds of Flank Steak (thinly sliced)
2 Garlic Cloves (minced)
8 Ounces Shitake Mushrooms (sliced)
16 ounces button mushrooms (halved or quartered)
Olive Oil
3 Cups of Brown Rice
6 Cups of Water
Marinade Ingredients
2/3 cup of low sodium Soy Sauce
1 cup Vegetable Broth
6 Tablespoons of Rice Wine Vinegar
4 Tablespoons Cornstarch
4 Tablespoons Sugar
3 teaspoons of Ground Ginger
1/2 teaspoon of Freshly Ground Black Pepper
Instructions
1. Prepare your rice. I always put mine in a rice cooker, 3 cups of rice (6 cups of water) should give you plenty for this recipe.
2. Make marinade in large bowl with ingredients above.
3. If your steak is not yet thinly sliced, slice and this time and put in marinade as you go.
4. Cover steak/marinade mixture and place in fridge (at least 15 minutes).
5. While steak is marinating, chop your veggies. Slice shitake mushrooms, halve button mushrooms, chop kale, mince garlic, and slice your green onions.
6. Warm a tablespoon of olive oil with minced garlic in a pan. Remove steak from marinade (leaving marinade) and cook until brown. Once browned take off heat.
7. In large pot, add the marinade and heat over high heat. Stir continuously until sauce begins to thicken.
8. Once thickened, add all those veggies!
9. Let the sauce work into those veggies for a few minutes and then add meat once kale has wilted down and mushrooms have softened.
10. Scoop on top of brown rice (or quinoa) and voila!
Side note, husband says he hates kale AND mushrooms and he gobbled this thing up. Thanks for the idea Gimme Some Oven!
The ONLY thing I didn't like about this recipe is how expensive the steak is… next time I might try it with chicken. I'll let you know how it is!
