One Pan Mexican Quinoa (Easy and Healthy!)

If you guys haven't noticed yet I'm all about easy recipes. If it's not easy enough than guess what? I'm likely not going to be cooking that night and we might be eating Beach Clubs from Jimmy Johns (mmm Jimmy Johns). Anyways, I've made this recipe twice in the past week. Maybe it's because I'm pregnant but I CRAVE IT. And guess what? There is literally not one ounce of guilt in this recipe. None of that, "mmm this is healthier but not healthiest"... it literally is guilt free.

I don't feel like the pictures justify how delish it actually is. You just have to trust me! :)

Ingredients (Serves two hungry adults. Maybe me and my husband just eat a lot though. Most people would probably say serves 4 lol!)
1 tsp minced garlic
15 slices of pickled jalapenos (If you're cooking for kids or are sensitive to spicy then do 10 or less... 15 isn't spicy to me though!)
 1 can of Corn
1 can of Fire Roasted Diced Tomatoes
1 1/2 cups of chicken or vegetable broth
1 cup of quinoa
1 tsp chili powder
1/2 tsp cumin powder
1 tablespoon olive oil
1 juicy lime
1 avocado
1/2 cup cilantro


This quinoa is from walmart... but it was 5 bucks for this little thing. I've found it's best and cheapest to buy it in bulk at costco or Sam's club. I like to buy mine prewashed so I don't have to rinse it myself!











Directions

1. Mince the 15 slices of jalapenos... as small as you can. In a pot that will fit all ingredients warm olive oil over medium heat. Add minced garlic and minced jalapenos to olive oil and let sauté for a few minutes. Stirring often so it doesn't burn. I let this simmer for a while so the jalapenos aren't too hot and the garlic tones down a bit!


2.  Stir in corn, tomatoes, broth, quinoa, chili powder, and cumin. Cover, bring ingredients to a boil and then reduce heat to medium and simmer for 20 minutes until quinoa is soft.


3. Chop cilantro and avocado.


4. Once quinoa is soft, remove from heat. Squeeze lime juice over pan. Add cilantro and avocado.


5. Let your tastebuds relish in all the flavors!




This is one of those recipes that makes you realize that healthy food DOES NOT HAVE TO BE BLAND. Healthy food can be just as tasty as the unhealthy stuff with the right ingredients! Let me know how this turned out for you! You can comment below or on my instagram at @BritneyMunday.

  1. Thanks for this! I have a big thing of quinoa in my kitchen but never know what to do with it! lol Oh and we just recently moved away from Jimmy John's (sad day) but oh how I did love Jimmy John's!

    1. Right?! Love Jimmy Johns! I know quinoa can be totally bland if you don't season it with something or other but this recipe is VERY flavorful. Let me know if you like it!
